One of my favorite indulgences is Red Velvet Cake, but the last thing I want to do is buy a whole cake! Fortunately, Hokulani Bake Shop brings it down to a single serving so I don’t go overboard.

I showed up (late) to the store, and by that time they were completely out of Red Velvet. Why should I be surprised? It’s their best seller! Out of distress, I did what comes naturally: I bought a dozen assorted cupcakes instead.

Oh, you thought these were all for me, didn’t you??  Thought I fell off the workout wagon? No, I took these to a potluck last night. I heard a lot about the Lilikoi cupcake, which lived up to the hype–the cake is tangy, the frosting is rich but not too sweet. Everyone inhaled their cupcakes with no complaints, so I’m guessing they were a hit.
